Even hot pot neophytes will easily find their footing, thanks to servers who usher the experience along with detailed guidance (and even hourglass timers, where needed), to make sure results are optimal. Small appetizers like gyoza or house-made yuba curds start the meal, but the main event is, of course, the hot pot. Guests select from a handful of options, choosing either shabu-shabu, where raw meats and vegetables are dipped in simmering broth, or nabe, where the components arrive arranged in the pot.
