Martin Fauster has found his feet in Freiburg, turning this restaurant into a mecca for foodies from the local area and beyond. Here in this beautifully maintained historical building in the pedestrian area, he keeps to his established path, serving up classically inspired cuisine. The quality of produce is remarkable, not least when it comes to the game dishes – the highlight being the distinctive, impeccably crafted sauces. The chef's Austrian homeland is also represented on the well-curated menu, with dishes such as Backhendl (breaded fried chicken) and Topfenknödel (curd dumplings). The friendly and professional waitstaff also provide astute wine recommendations. The attractive location in the old town makes the terrace a popular spot in summer. The restaurant is also open for lunch on Fridays and Saturdays, when a set menu is served in addition to the regular à la carte offerings. Parkhaus Schlossberggarage across the street is a convenient parking option.
